Thai Cuisine is getting a remodel. They haven’t opened yet but they will this summer.
Word has it that they will start business through their food truck outside the restaurant. Thai Restaurant in Rio Rancho has operated since 1997 and will continue doing so.
They will be serving appetizers, noodles, salad, curry and other lunch specials. The restaurant also serves gluten free, vegan, and vegetarian options. Local Thai beers and wines are also available.
They plan on keeping Thai traditions in the restaurant. Their website describes Thailand and its ingredients. For example here is how they describe their Papaya Salad:
Green papaya salad is called Som Tum, with “Som” meaning “Sour” and “Tum” referring to the pounding sound of the large pestle used to crush ingredients. It is eaten by itself as a snack, or with marinated grilled beef, chicken and sticky rice.
If all goes well, they hope to open by August. They are just awaiting inspection approval.
