Listen to the weather

It seems like the weather this week is flip-flopping. Today is no different. 

Today is the kind of Thursday where you think it’s the weekend and it isn’t. But that doesn’t mean you can’t do something worth your while.

The pressure is decent today, so that means baking in my book. There is nothing like a good banana bread. See the recipe below.

Hopefully, the rain later will cool us off.

“Widespread showers and storms with heavy rainfall are likely over northern NM through Saturday. Dangerous flash flooding is possible, especially near burn scars,” Albuquerque National Weather Service Meteorologist Troy Marshall said.

 

Here is the look ahead for today:

There’s a chance of  showers and thunderstorms, mainly between 4 pm and 1 am. Some of the storms could produce heavy rain. Mostly cloudy, with a high near 90 and a low around 66. Chance of precipitation is 60%. New rainfall amounts between a tenth and quarter of an inch, except higher amounts possible in thunderstorms.

Banana Bread:

  • Preheat oven to 350
  • Butter and flour the bottom and sides of a 9 x 5 x 3 inch loaf pan
  • On baking sheet, bake nuts for 8-10 minutes or until lightly toasted
  • Let cool
  • In mixing bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts
  • Set aside
  • In another mixing bowl combine mashed bananas, eggs, melted butter, and vanilla.
  • With rubber spatula or wooden spoon, lightly fold wet ingredients into dry ingredients just until combined and the batter is thick and chunky. DO not over mix
  • Scrape batter into loaf pan
  • Bake until bread is golden brown and toothpick inserted in center comes out clean, about 55 to 60 minutes
  • Cool on wire rack
